Abstract


Confectionery is one of the many handicrafts which are bound to disappear. That is the reason why collecting the secrets handed down from generation to generation from the last men and women in the trade becomes of crucial relevance . This is our main concern in this paper, based on our own field work carried out over the Spanish province of Guadalajara, a especially conservative area very rich in old traditions. There, confectionery was scarcely developed, what makes it be worthy of particular interest. In the paper we study and describe the craft itself, its secrets and the sweets that have traditionally been elaborated.
